Shirred eggs, or baked eggs as most people call it, is an underrated and healthy way to eat eggs while easily being able to add delicious toppings and mix-ins. What you can put in baked eggs is the same as an omelet-you can add cheeses, fruits, vegetables, spices, and herbs in them.
This recipe can work in a variety of meal types. They work best as a breakfast meal similar to an omelet. But they can also work very well as a holiday main course, a snack you can bring to work to eat during lunch time, and even as a side meal during barbecues. Pair them with potatoes, oatmeal, smoothies, or toast for an exquisitely pleasant brunch. Baked eggs are versatile, since you can mix many unique foods inside them (even some sweet foods may work inside them, like candied salmon or caramelized onions).
These qualities of baked eggs make them a simple and reliable dish that can be customized to fit your needs.
Baked Eggs With Sausage, Cheese, and Veggies
Equipment
- 4 heat resistant egg dishes
- 1 basting brush
- 1 baking pan
- 1 heat resistant bowl
Ingredients
- 2 tbsp unsalted butter for melting
- 8 large brown eggs no more than 2 eggs per dish
- ⅛ tsp salt per dish
- ⅛ tsp black pepper per dish
- small sausage pieces
- parmesan cheese shreds
- feta cheese crumbles
- cheddar cheese shreds
- additional fruits and veggies tomato, spinach, mushroom, etc.
Instructions
- Preheat your oven to 375°F (190°C).
- Melt all the butter in a heat-resistant bowl. You may use the oven to make the melting process faster.
- Then, grab a basting brush and apply the butter in each of your baked egg dishes.
- Put in 2 eggs per dish, making sure no egg cracks fall in any of them. If you want to bake your eggs sunny side up style, make sure not to pop the yolk bubbles.
- Sprinkle in the sausage pieces and cheeses in the dish. Then add the salt and pepper on top.
- Once every dish is complete, put them on a baking tray and set it in the oven. Bake for about 15 minutes.
- When the eggs look solid and golden-brown, remove the tray from the oven and set it on the table.
- Before the baked eggs cool down, you may add additional cheeses to create a mouthwatering topping (this is optional). Then, you can add fruits and vegetables on top like spinach, sautéed mushrooms, diced tomatoes, and bell peppers to finish.
- Allow the baked eggs to cool before serving.
More ingredients to add on top
For herbs, you can use chives, parsley, oregano, dill, thyme, and cilantro, as they seem to work best.
For other vegetable options, you can use spinach, sautéed asparagus, avocado, hash browns, leeks, scallions, bell peppers, and many more.
You can also choose to include more meats like chicken, salmon, chorizo, crab, lobster, shrimp, beef jerky, and ham.
Don’t be afraid to try more creative options like caviar, pesto, okra, chili, sour cream, seasonings, and even oats.
How to store baked eggs
To store baked eggs, cover your eggs in plastic wrapping, place them in an airtight container, then place them in the fridge. They will last up to five days this way.
For freezing, cover your eggs in foil, place them in a freezer-safe container, then place them in the freezer. The amount of time they last can vary, and it is usually about one month on average.
Baked eggs are susceptible to freezer burn if certain parts are exposed. Make sure you wrap them nice and tight before placing them in the freezer.
