How To Make Sugar-Free Oatmeal Apple Muffins

These scrumptious sugarless muffins are very easy to make and serve multiple people. Apple is an underrated mix-in to muffins that make them taste richer and creamier. The addition of oats gives them an additional crunchiness and supplies the muffins with extra fiber and protein. These benefits, along with it being sugar-free, lends to it being a great breakfast or midday snack. If you want to add sugar, I personally find it best to sprinkle it on top after the muffins have already been baked.

Ingredients

  • 1 ¼ cup of whole wheat flour
  • 1 cup of rolled oats
  • 1 tsp of baking powder
  • ½ tsp of baking soda
  • ¼ tsp of salt
  • ½ tsp of cinnamon
  • 1 cup of apple sauce, unsweetened
  • ½ cup of milk (low-fat, coconut, almond, half-and-half, buttermilk OR heavy cream)
  • 2 tbsp of vegetable, canola, OR coconut oil
  • 1 large egg
  • ½ tsp of vanilla extract
  • 2 small or medium apples (any type), diced
  • Additional cinnamon, nutmeg, or sugar to sprinkle on top (optional)

Directions:

  1. Firstly, preheat your oven to 375 F (190 C). Set aside a 12 cup muffin pan laced with muffin wrappers.
  2. Combine all dry ingredients in a large bowl (flour, oats, baking powder, baking soda, salt, and cinnamon).
  3. Then, combine all wet ingredients in a separate medium or large bowl (apple sauce, milk, oil, egg, vanilla).
  4. Create a hole in the center of your dry bowl, then pour the wet mixture in it and mix everything together. It may take some time for the mixture to reach a smooth and creamy consistency, so keep at it. I highly recommend using a whisk or electric mixer.
  5. Finally, add in the diced apples and mix them in well with a spoon.
  6. (Optional) Apply a generous sprinkle of cinnamon, nutmeg, or powdered sugar on top of your muffins.
  7. Place the pan in your preheated oven and bake for 16 minutes. If they are still wet after that time, bake for 2 more minutes.
  8. Take out the pan, let it cool for 5 minutes or so, and enjoy your healthy apple muffins! Feel free to sprinkle more sugar or spices on top if you want.

Storing your apple oatmeal muffins

For storage, they are best kept in the fridge instead of at room temperature since they contain fresh apples, which can spoil quickly. They most likely won’t last longer than a few days at room temperature, so place them in the freezer if you need long-term storage.

Cover your muffins in plastic wrapping before storing them to prevent them from losing moisture.
