Preheat a skillet on your stove to medium heat.
In a medium bowl, whisk together the eggs, milk and vanilla until combined. You may choose to mix in the cinnamon as well, or coat the cinnamon manually by hand.
Soak the bread slices thoroughly in the egg mixture. If you choose to combine the cinnamon manually, pepper the cinnamon on a plate and coat the bread with it on all sides.
Repeat for each slice of challah bread. When ready, grease your skillet with unsalted butter/cooking spray and put in one slice of bread.
Cook one side for 2 minutes or until golden-brown. Flip the slice over with a small spatula and cook for another 2 minutes or until golden-brown.
Serve the toast on a dish and repeat with all toast slices until finished.
If you want to have French toast sticks, simply cut the bread into sticks with a knife.
Feel free to top the toast off with anything. Powdered sugar, maple syrup, and ground nutmeg are perfect toppings.
