This incredibly nourishing and tasty oatmeal banana bread can be eaten anytime of the day and is great for serving on holidays. It is relatively cheap to make and is also dynamic as some ingredients can be swapped to meet your health needs. Bananas and strawberries are unquestionably delicious and serve as healthy mix-ins to an already healthy bread!
Ingredients:
- 1 cup of sliced strawberries
- ½ tbsp of white sugar OR brown sugar
- 1 and ¾ cups of flour (all-purpose, whole wheat, or gluten-free)
- ¼ cup of rolled oats (add a bit more if you prefer)
- ½ cup of white sugar OR brown sugar OR unfiltered honey
- 1 and ½ tsp of baking powder
- ½ tsp of ground cinnamon (optional)
- 1 tsp of lemon extract (optional)
- 1 whole mashed banana
- 2 eggs
- 1 and ½ tbsp of olive oil OR coconut oil
- ½ tsp of salt
- 1 tsp of vanilla extract

Directions:
- Preheat your oven to 375°F (190°C). Grease one 5×9 inch bread pan and add a slight coat of flour to it.
- Place strawberries in a medium-sized bowl and sprinkle in the smaller quantity of sugar listed near the top of the ingredients. Stir in the banana, eggs, oil, and vanilla using a wooden spoon. Add in the optional lemon extract at this point if you want to give your bread a kick in taste. The lemon also contrasts nicely with bananas and strawberries in the mixture.
- Mix the flour, sugar/honey, oats, baking powder, and salt in a larger bowl. Add in the optional ground cinnamon at this time if you desire some extra spice. I highly recommend using an electric hand mixer to mix the ingredients together.
- Pour your banana-strawberry mixture into your flour bowl. Mix everything together into a smooth batter.
- Pour the batter on your greased bread pan-it should surely fit evenly into it.
- Put the pan in the oven and bake for about 30 minutes. A completed loaf should appear golden-brown. It is worth noting that the stick test may be inaccurate because the strawberries within will be melted and might create a residue. For more accuracy, use the stick test in multiple places on the loaf. Finally, if it is ready, let the strawberry oatmeal banana bread cool off and enjoy!
